I meant to do a Noom review this week and ran out of time. I’m going to try to get it done tomorrow for posting later this week instead.

So, today, I’m going to share one of my favorite Instant Pot comfort food recipes: Chicken Bacon Corn Chowder!

Now, this isn’t fat free or cholesterol free or anything like that. It has 2g sugar, but my diabetic husband can eat it with no problems, and it is SO DELICIOUS. You could probably leave out the bacon and reduce the fat and cholesterol significantly (but it is SO GOOD with the bacon!).

I like to make a whole Instant Pot full of this and then freeze some for later, or just have a cup with a salad or something for lunch for a few days, because it makes a lot. Last night it fed five of us (including seconds), with leftovers for today! I haven’t measured the servings exactly, but my best guess is that it makes about 18-20 ladles full, and my ladle is about a cup. So, it’s my best guess. Nutrition info is below.

The point of this recipe is that even stuff that isn’t fat-free or carb-free or keto-friendly can fit in your diet, if you’re smart about your portions. Stop when you’re full, and save some for later!

Super Tasty Extra Yummy Fan Favorite Chicken Bacon Corn Chowder (for the Instant Pot)

  • Prep time: 10 minutes
  • Saute time: 15 minutes
  • Manual high pressure: 10 minutes
  • Set time: 10 minutes

Note that the Instant Pot takes some time to come up to pressure, plus there’s the natural release + quick release time, so start-to-finish you’re looking at probably an hour to prep and cook this.

Ingredients

  • 2 lbs boneless, skinless, chicken breast
  • 1 lb thick cut bacon
  • 3 cans corn, drained
  • 1 can creamed corn
  • 1 medium onion, diced
  • 2 tbsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups heavy cream
  • 2 cups vegetable stock (or you can use water)
  • 2 lbs red potatoes, diced
  • 1 tbsp cornstarch

Directions

  1. Pro tip: Dice the bacon first! I tried cooking the bacon first then dicing it one time and it didn’t work so well. So now I split the stack of bacon in half lengthwise, then slice the rest of the stack across the width in small slices. It all breaks apart nicely when you saute it!
  2. Put your Instant Pot on Saute, and saute all the bacon. Set it aside to drain, and leave the grease in the Instant Pot. This adds a ton of flavor!
  3. Leave the Instant Pot on Saute, then add the chicken, onions, and garlic. Saute until chicken looks cooked through and the onions are translucent.
  4. Add corn and stir. Saute for 3 more minutes.
  5. Turn Instant Pot to off. Add vegetable broth (or water, depending on what you’re using), potatoes, 2/3 of the bacon, salt, and pepper.
  6. Stir well.
  7. Put the lid on the Instant Pot and seal the valve. Set it to manual high pressure for 10 minutes and walk away!
  8. When the cook time is complete, let it naturally release for 5 minutes.
  9. While it’s releasing, whisk the corn starch and heavy cream well.
  10. Once the 5 minutes are up, quick release the remaining steam.
  11. Pour the heavy cream and cornstarch mix into the soup and stir well.
  12. Let sit for 10 minutes.
  13. Serve, garnishing with the reserved bacon. You can also add a sprinkle of french fried onions if you like!

If you’ve been thinking about getting your own Instant Pot, I highly recommend it!! We all know I’m not the most domestic person on the planet but even I can cook with one of these things! And it’s awesome for making a lot of food fairly quickly for lots of friends and family!

I found the IP-LUX80 8qt 6-in-1 version to be the most affordable for the size I wanted, this is the exact one I have. As of 9/1/19, it is around $80 on Amazon. There may be newer ones with extra bells and whistles but this has served me and the family excellently so far. Please let me know if you have any questions on how to use it!
